Thotakura (Amaranth Leaves) Fry



Ingredients:
  • Thotakura/Amaranth Leaves - 4 to 5 bunches
  • Onion - 1 finely chopped
  • Green Chillies - 5 chopped
  • Garlic - 6 flakes
  • Ginger - 1/2inch finely chopped (optional)
  • Red Chillies/Endumirchi - 2(optional)
  • Avalu/Mustard seeds - 1tsp
  • Jeelakarra/Cumin seeds - 1tsp
  • Turmeric powder - 1/2tsp
  • Oil - 2tbsp
  • Salt to taste
Method:
  • Wash Thotakura/Amaranth leaves thoroughly. Chop it finely and keep aside.
  • Heat oil in a pan. Add mustard seeds, cumin seeds and red chillies and allow it to splutter.
  • Once spluttering starts add green chillies, onions, garlic, ginger, turmeric and fry for 5minutes.
  • Add chopped thotakura/amaranth leaves and fry for 5minutes.
  • Close the lid and cook until leaves are well cooked.
  • Serve hot with rice.
